This no bake fruit / kiwi cheesecake is creamy, rich, and a bit tangy. It has a thick and crunchy oreo cookie crust. This recipe is perfect when you have ripe kiwis with you . You can use any berry or fruit of your choice in this recipe.I love the creamy and fluffy texture from a good no bake cheesecake.

Directions
Cut 3 kiwi into small pieces and blend them into a fine puree.

Add the puree and sugar into a pan and bring it to a boil over high heat and then simmer it over low heat for 10 minutes.
Remove the puree from heat and let it cool down completely.

Crush the oreo cookies into a coarse powder. you can resort to any method for this.
Add butter to the cookie crumbs and mix well.
Add the oreo mixture to a 6 inch pan and compact well at the bottom to form an even crust. let it refrigerate until we prepare the filling.

In a bowl add the cream cheese and smooth it down with the help of a rubber spatula.

In another large bowl ad the cream and whip it with the help of an electric beater until stiff peaks are formed.
Add vanilla and cream. cheese to the cream and beat at low speed until combined.

Pour the cooled pure and fold it gently until incorporated.
Transfer the filling to the tin and level the surface.
Decorate with sliced kiwi. and refrigerate for a minimum of 4 hours or overnight.
Remove from mould and enjoy!
Tips:
- You must use full fat cream cheese which is more solid so that it holds and firms up in the fridge, as we’re not using gelatin or eggs, since this is a no-bake cheese cake, to hold it together.
- Make sure to whip the cream to stiff peaks. This will help the cheese cake to hold the shape and set well in the refrigerator to give a creamy cake.
- Let the fruit puree cool completely before adding it into the cheesecake mixture. Also make sure the consistency of the puree is thick .
Alternative Ingredients:
- Instead of oreo cookies you can use graham crackers or any solid biscuits.
- Sweet whipping Cream can be replaced with the same amount of whipping or heavy cream plus 1/4 cup sugar
